Baked Pineapple & Coconut Oatmeal

Ingredients:


  • 2 cups old fashioned oats

  • 1/3 cup brown sugar/white sugar

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 2 eggs slightly beaten

  • 1/3 cup melted butter

  • 1/3 cup yogurt

  • 2/3 cup milk

  • 1/2 teaspoon vanilla

  • 1 cup diced pineapple crushed is fine too, whichever you prefer or have on hand

  • 1/2 cup unsweetened coconut flakes


Method :

  1. Preheat oven to 180°C

  2. Combine oats,sugar, salt and baking powder. Beat eggs, butter, yogurt, milk, and vanilla together using a fork.

  3. Stir wet ingredients into the dry until well combined.

  4. Add in pineapple and coconut.

  5. Pour into greased baking dish. Bake at 180 °or 35 minutes.

  6. Remove from oven and let cool 5-10 minutes before serving.
