Chicken Satay with Peanut Sauce

Bangkok, Thailand is known for the amazing street food. Thai food is one of my favorite cuisines, so much flavor and umami in their foods! On of my favorites is Chicken Satay with Peanut Sauce. Check out this delicious recipe and I hope you give it a try!! Chicken Satay with Peanut Sauce


Ingredients:

  • 1/4 cup coconut milk

  • 2 tbsp soy sauce

  • 2 1/2 tsps yellow curry powder

  • 1 1/2 teaspoons turmeric

  • 3 cloves garlic, minced

  • 1 tablespoon freshly grated ginger

  • 1 tablespoon brown sugar

  • 1 tablespoon fish sauce

  • 2 lbs boneless chicken, breast or thighs


Kosher salt and freshly ground black pepper, to taste


3 tbsps creamy peanut butter

1 tbsp soy sauce

1 tbsp freshly squeezed lime juice

2 teaspoons brown sugar

2 teaspoons chili garlic sauce

1 teaspoon freshly grated ginger


Method:


  1. To make the peanut sauce, whisk together peanut butter, soy sauce, lime juice, brown sugar, chili garlic sauce and ginger in a small bowl.

  2. Whisk in 2-3 tablespoons water until desired consistency is reached; set aside.

  3. For the chicken, combine all ingredients in a large bowl or Ziploc and marinade the chicken for 2 hours or best overnight.

  4. Once the chicken is done marinating, place chicken on wooden skewers and grill or air fry for 20 mins at 350 until fully cooked.
