1 cup Flour
3/4 cup ground sugar
1/4 cup oil
1/4 cup melted butter
1 tsp baking powder
1/2 tsp baking soda
1/2 cup unsweetened cocoa powder
1 full egg
2 egg whites
A pinch of salt
1 tsp vanilla extract. Or 2 drops of vanilla essence as its stronger.
This recipe require NO BEATER!
Also 1/4 cup of milk
For Ganache icing any good quality chocolate.
1/3 cup of whipping cream.
First mix flour in a bowl with a whisk to remove lumps
Add coco powder mix
Add salt and sugar
Mix all ingredients well
Add 1 egg n 2 egg whites, melted butter, oil, add oil. And lastly the milk
Mix well with whisk, then using a spatula to remove any lumps
For ganache break chocolate in smaller pieces .
Bring cream to about to boil in microwave. Take it out and pour on chocolate. Mix until all chocolate is melted
Fill each cupcake 2/3 full and bake in a preheated oven for 325°F for 20 - 23 min
Its better to check after 15 min though with a back of a match stick. If it comes out clear then its done
Allow cupcakes to cool before icing
Swirl cupcakes into ganache for an easy icing
