INGREDIENTS:

  • Marination-1

  • 1/2kg chicken boneless

  • 1/2 lemon juice

  • 1/4tsp salt

  • 1/2tsp red chilli powder



Marination 2:

  • 3/4tbsp kasuri methi

  • 1/2tsp turmeric powder (haldi)

  • 1/2tsp garam masala powder

  • 1tbsp oil

  • 1tbsp ginger garlic paste

  • 1/2cup Greek yogurt (thick curd)


For gravy:


  • 2tbsp butter

  • 2tbsp oil

  • 1tbsp ginger garlic paste

  • 1pinch cinnamon powder

  • 1pinch cardamom powder(elachi)

  • 2 medium tomatoes

  • 15 cashew nuts

  • 1tsp red chilli powder

  • 2tbsp tomato paste

  • 1/2tsp garam masala powder

  • 1/2tbsp kasuri methi

  • 1/2tsp sugar

  • Salt as taste

  • 100ml cream

  • Handful coriander leaves


METHOD:

  1. Marinate chiken with lemon juice ,salt and red chilli powder for 20mins.

  2. Marinate again with yogurt, kasuri methi,oil,turmeric, ginger garlic paste & garam masala powder.

  3. Cover and refrigerate for 12hrs

  4. Add cashew & tomatoes to grinder to make smooth purée. If the purée is not smooth then pass it through a filter set this aside.

  5. Add 1tbsp butter to a pan and add the marinade chicken. Fry on high flame till all the moisture evaporates.

  6. Heat a pan with butter and oil sauté cinnamon & cardamom powder for a min.

  7. Add ginger garlic paste, sauté for few secs.

  8. Next add the tomato cashew purée.

  9. Add red chilli powder,sugar & salt 🔸Mix and cook until the tomato purée becomes thick.

  10. Add 1cup water more or less water to suie your desired consistency.

  11. Bring the mix to a boil and simmer for 3to5 mins.

  12. Add chicken and tomato paste, simmer for 5mins .

  13. Butter chicken should become soft and tender, add garam masala powder & kasuri methi.

  14. Stir and simmer for about 2 to 3mins, pour chilled cream and switch off the stove.

  15. Garnish butter chicken with coriander leaves and extra cream if you wish.
