For Kachori stuffing:
1 bowl milk powder
1/2 small pkt. Cream
3- 4 tbsp. ghee
Some nuts (almonds, cashew, pistachio, raisins)
1 tsp cardamom, ilachi powder and saffron
1-2 tbsp. powdered sugar
For Sugar syrup:
1 glass of water
2-3 cup of sugar
For Kachori Dough:
2 cups white flour (Maida)
1/2 cup oil
water as needed
To make Kachori stuffing:
Take a pan, Add ghee. Once heat up, add cream & milk powder.
Mix well until it turns to Mawa. Cook on medium to low flame.
Switch off flame and Keep Mawa aside.
Take another pan, Add 2 tbsp. ghee and nuts. Sauté it for 2 minutes.
Now, Add Mawa in the pan. Mix well.
Add cardamom powder & saffron in the mixture. Cook for 5-10 mins.
Let the Mawa mixture cool at room temperature.
Lastly, add powdered sugar to it.
To Make sugar syrup :
Boil water boil and add sugar
Let it boil till it turns semi thick
Turn off the flame and Add cardamom & saffron to sugar syrup
To make Kachori Dough:
Mix oil with Maida and Knead the dough till soft. Cover it for 15-20 minutes.
Make small balls, make it little flat on your pam
Fill the Mawa mixture in it and Stick it properly to give shape like kachoris.( It should stick in proper manner so that it doesn't open while frying )
Heat up oil/ ghee on high flame, then slow down the flame. Fry kachoris on medium flame till it turns golden brown.
After frying, Let all kachoris cool at room temperature.
Now, Dip kachoris in sugar syrup for 10- 15 mins and remove it.
Serve with Rabri or Cream on Top and Enjoy !!
