3tbsp Coriander seeds,
2tsp Whole Black pepper,
4tsp Dried Fenugreek leaves (Kasuri Methi) ,
Chilli flakes (for the paste),
8 Chicken Whole legs,
1cup Hung curd,
3tbsp Ginger Garlic Paste,
4tsp Garam Masala Powder,
4tbsp Vegetable Oil,
Salt to taste.
Roast Coriander seeds, Cumins, whole black pepper and dried fenugreek leaves for a minute and then grind them to make a coarse powder
We have taken the chilli flakes. Now make a paste of it using a mixer.
Let's Marinate the chicken..
Put some gashes on both the sides of the chicken leg
Now in a bowl, add Hung curd, Ginger Garlic paste, lemon Juice, Garam Masala powder, Salt to taste and the coarse powder that we have made.
Also the chilli flakes paste that we made and oil
Now mix all these well and rub well on the chicken
Let it marinate overnight
Place a small piece of charcoal on direct flame till it's piping red hot.
Immediately place inside the steel tumbler and pour 1tbsp of oil over it as it begins to smoke ,quickly cover the bowl. (Do not let the smoke escape)
Keep covered till the smoke dies down. Discard the charcoal.
In the oven, grease the wire rack lightly.
Place the chicken on the wire mesh over a tray lined with foil paper in the oven.
Do not discard the leftover marinade in the bowl -we will make a gravy
Bake for 20mins
After 20mins, Paste all the pieces well with the melted butter Broil...
After 5 minutes flip the chicken and brush butter on the chicken and let it cook for another 20mins and then take it out.
(Do not over cook)
(Cooking time may vary)
For the Gravy (chutney)
You will need a Tomato paste and Thick cream.
Keep the leftover marinade inside the oven in a bowl and let it cook for 5mins take it out and add cream and the tomato paste and keep in the oven for another few minutes
